黃梨炒飯 Pineapple Fried Rice

今早走路去上班時,突然看見前方有一只狗蹲坐在路邊,雙眼目不轉睛地凝視著前方,絲絲地散發出依依不舍的光芒。似乎它的前方有何令它留戀的事物般,緊緊地吸引著它的注目。
I was walking to my office this morning. Suddenly, I saw a dog sitting in the roadside, seeing in front with his fixed eyes, as if there's something catching his attention.

當我繞過它身(我可是怕狗怕得要命!哈哈!),看見的竟然是另外一只狗(母狗吧!哈哈!)正拼命回頭地瞧著蹲坐的大狗,眼神似乎透露出絲絲的眷戀。

When I passed by that dog, what I saw was there was another dog (Perhaps it's a bitch?!) in the front of the small path, kept on turning its head back and gazing at that sitting dog.

呵呵,該不會一日春曉后依依不舍的離別啊?嘻嘻!不過那一幕情景還真有點感人的說,可惜沒有相機,然而我卻緊緊地捉著那一幕,深深地此刻情景給攝入眼簾里。
Oh, is it possible a parting moment after a deep and sweet gathering? =P Anyway, it's a bit touching, but it's a shame that I didn't bring any camera. Nonetheless, I'd capture this scene with my eyes.

雖然沒有任何的實品記錄這一刻的感覺,但卻已經深深烙在我的腦海里了... ...
It's already deep in my mind albeit there's nothing I could take out as a proof...

哈哈!回歸原題,又是吃的時候了!差不多天天看吃的,你們會不會膩啊?哈哈哈,沒關系,下個星期應該會沒有了吧!嘻嘻!
Umm... back to the main topic. It's time to talk about food again. Will you guys be bored since I've written almost all the posts in food lately? Haha, it's ok, I think it most probably won't have any recipe next week anymore. =P

其實以前的時候,我也從未想過黃梨原來可以拿來炒飯而已。我平常炒的都是最普通的黑醬油炒飯,要么就蛋炒飯,而上一次突然間想用黃梨做菜而去找資料時,讓我發現原來黃梨可以炒飯,而且味道也很贊哦!尤其是喜歡黃梨的人,應該會喜歡這道菜吧!
Basically, I've never thought that pineapple can be used in cooking fried rice. What I usually do in cooking fried rice is putting some dark soy sauce and eggs. Or I will just use eggs to cook an egg fried rice.

I've found out that pineapple can be used in cooking fried rice during the time I was trying to find any recipe in pineapple. After I tried this, it tasted not bad. I reckon that persons who love pineapple will love this dish too.

這就是我所用的材料了。本人不喜歡炒飯時放蒜茸,就像炒蛋一樣,也是不放蒜茸的。所以如果你喜歡蒜茸炒飯的味道的話,味道應該會更香吧?嘻嘻!
Above was the ingredients I used in fried rice. Since I don't like the taste of garlic in fried rice, just the same while I fry eggs, I won't put any garlic. Thus, if you love the garlic's taste, you can put some while making this dish. Perhaps it will taste better for you. =P

材料(2人份) Ingredients (Serves 2):
黃梨半粒切丁 Half pineapple, cut into 1cm dices form
熟飯(2人份) Cooked rice (serves 2)
青豆七八條吧,切丁 8 Green beans, cut into small slices
紅蘿卜切丁 Diced carrots
江魚仔少許 Anchovies
雞蛋兩粒打散 2 beaten eggs
雞柳一撮剁碎(剛巧有!=P) Some chopped chicken fillets

調味料 Seasoning:
鹽少許 Pinch of salt
醬油二湯匙 2 tbsp of Soy Sauce

做法 Methods:
1. 燒熱鍋,放一湯匙油燒熱,加入江魚仔爆脆,盛起。
Heat the wok, put 1 tbsp of oil, later add in the anchovies and fry until golden brown. Put aside.

2. 加少許油,后加打散了的雞蛋,煎至8分熟,搗爛,放入少許醬油,盛起備用。
Add some oil, heat it and add in the beaten eggs, fried until 80% cooked and add some soy sauce. Dish off.

3. 加一點點油(看之前煎蛋后油有剩下多少而定),放入雞柳碎,炒至白色,放入短豆和紅蘿卜,炒至香。
Add in some oil again (depends on how much oil left after frying eggs), put in the chopped chicken fillets and stir-fry till medium-well, add in green beans slices and diced carrots. Fry until aromatic.

4. 后加黃梨(瀝干的),翻炒幾回后加入之前的煎蛋,然后飯,翻炒幾次。
Drain the pineapples. Add in into the wok, stir-fry the ingredients for a while and toss in the fried eggs. Later pour in the rice and stir-fry for a while.

5. 加入調味料后再翻炒幾回。倒入江魚仔攪拌一會兒后熄火。盛起即可食用。
Add the seasonings and fried anchovies. Dish off.


注 TIPS:
@飯熟后隔一段時間才來炒飯會比較好吃。如果是午餐的話,建議是隔夜飯;如果是晚餐的話,可以用早上煲好的飯。
@ It will be tasted better if you use overnight rice to cook fried rice if it'll be a lunch or you can cook rice in the morning if it'll be a dinner.

@炒飯時用的油不要放太多,不然會比較濕口感不會太好。而且太油膩對身體也不好啦,哈哈!
@ Don't put too much oil while cooking fried rice, otherwise the fried rice will be a bit moist and it won't be tasted well. Furthermore, oil isn't good to health, right? =P

@蛋不需搗太爛,如果你還想吃到蛋的話。=P
@ If you still want to taste the eggs slices, please don't cut it into too smaller pieces.

上個星期回家瞧見老弟買的蛋糕粉,手癢跑去做蛋糕。
回想起來,大概都有8、9年沒有做蛋糕了吧!果然做起來不夠松脆,而且某些部分還很硬呢!
或許,巧克力粉放太多了?或許,沒有攪拌均勻?
沒有做蛋糕該用的道具,做起來果然差很多呢!【這是非常欠缺功力的關系!嘻嘻!】

I made a cake after 8 or 9 years last weekend when I was still in my hometown. Haha, it was actually because the boredom doing nothing at home. My hands were started itchy when I suddenly got a glimpse of the cake flour.

And now, here it is. It's pretty hard to bite, perhaps I was putting too much chocolate powder, or perhaps it's not blended thoroughly. Anyway, I'm not good in making cakes. I know.

如無意外,這個禮拜又是很多關于吃的。
If there's no something unexpected happen, this week will be a "food fest week" again. =P

算了算,應該會有3道菜要post上來。呼,應該下個星期不會有吃的了,腦海里面已經没有任何特别想要吃的菜肴,有些想吃的我的室友卻不吃,所以就算了咯!
If not mistaken, there's around 3 dishes to be introduced. It's perhaps there'll be no more recipe for next week since I couldn't think of what special dishes I would like to eat for next week. And somehow there's lots of things my housemate doesn't eat, thus, lots of dishes can't be made too.

今天想要介紹的是當歸蒸雞。這可是一道超級容易的菜肴,最主要是有个蒸鍋就行了,其他的材料简直就是易找!
What's for "Today's Special"? It's Steamed Chicken with Angelica. It's an easy made dish, and what you need to have is a steamer, and the ingredients needed for this dish is darn easy to find.

材料(2人份) Ingredients (Serves 2):
當歸5片 Angelica root (Female Ginseng) 5 slices
雞腿一個切小塊 Drumstick cut into small pieces (It's better not to remove all the skins)
杞子一撮 Pinch of wolfberries
紅棗5粒 5 Red dates

腌料 Marinade:
醬油一湯匙 1tbsp of Soy Sauce
蠔油兩湯匙 2 tbsp of Oyster Sauce
胡椒粉少許 Pinch of pepper powder

做法 Method:
1. 用腌料腌雞至少30分鐘。
Marinate the drumstick pieces into the marinade above for at least 30 minutes.

2. 把當歸排列在盤子上,放入雞、杞子和紅棗。
Put the Angelica slices neatly on a steam bowl. Put in the drumstick pieces, wolf berries and red dates.

3. 用中大蒸25-30分鐘即可。
Steam with medium to high heat for around 25-30 minutes. Dish off.



注 TIPS:
@ 當歸藥材純正的話,這道菜吃起來會更香。
@ If the Angelica slices are sterling, this dish would be more delicious and smell more aromatic.

@ 如果腌鹽的話,色澤就會像照片一樣沒那么好看。(應該是鹽的關系,哈哈!)
@ If the drumstick pieces are marinated with salt, the color of the steamed chicken won't be so nice if not mistaken. Above steamed chicken was marinated with salt.

@ 25-30分鐘是普通的蒸鍋所該用的時間而已,不能當作任何的標準哦!
@ 25-30 minutes are the time I need if I'm using my steamer. Somehow the time for steaming is slightly different while using different sorts of steamers and it also depends on the heat too. So, just estimate the time.


就是這樣而已,是否很簡單呢?嘻嘻!我超愛這道菜,尤其女生該多吃哦,因為當歸補血調經,對身體好呢!當然當歸還有其他功效的,只是最主要是補血吧?
Is it so easy to cook it? I love this dish so much since Angelica has the efficacy of enriching the blood and help in making the menstrual period coming in more accurate time. Thus, it's good for ladies, and of course there're some other efficacy for Angelica root too.

呼,看著看著,我又想要吃了呢!
When I look at the picture, I feel like wanna have this dish again! YUMMY~~

哭哭。。切到手指了!臭姜有事沒事干么生得那么硬,害我一溜手差點連我的手指也當姜切!
不過,竟然不痛咧!真奇怪!

唉,手指受傷了,很久以前的第一次又得發生在我身上了。
第一次一只手洗臉,第一次一只手沖涼,第一次一只手洗衣。。。哇老!還蠻多第一次的嘛!

*CRY* I cut my finger! *CRY* It's because of the ginger which was damn hard to cut. I slipped my hand and cut my finger abruptly.

Stupid ginger! You caused the ugliness of my finger!

However, it's not painful. Not even a little. WHY? I've no idea, perhaps I'd cut off the nerves of my finger? JK...

And now I need to wash my face with one hand, bath with one hand, wash clothes with one hand and even type with one hand.

Gosh! It's damn inconvenience with just using one hand.

幾個小時沒見,又是時候說餐點!

It’s time for another recipes~!


其實我寫上這么多菜的煮法也是怕我自己以后沒煮會忘記。畢竟沒多久后就沒煮了,所以該寫下來紀念一下,要不然就會像以前一樣,怎么想也想不起煮法如何,只記得成果的樣子!暈!

Basically I’m just afraid I will forget the way to cook some dishes if after a long time I didn’t cook. Thus, it’s good for me to write down the methods. No matter how long I didn’t cook, at least there’s a record for me as a reference in the future. Right?


今天的梅菜五花肉其實很簡單,是星期三的晚餐之一。可惜,煮了那么多次,這一次煮得最不好吃,也不懂我發生什么事了。

This dish "Preserved Vegetables with Pork Belly" is easy to make. It’s one of my Wednesday’s dinner’s dishes. It’s a shame that this was the worst I’ve ever made before.


我覺得,煮菜和其他的藝術一樣,如果廚師有心弄一餐的話,相比以同樣食材和煮法卻沒心隨意煮一餐的人,味道總會是比較美味些。

I always believe that you need to give your heart while cooking, just same as doing any arts. If you have no concentration, the taste will not be tasty although the ingredients and method of cooking are the same.


或許,那天煮菜的時候只想著何時能快點煮完后想要沖涼的關系吧?

So, perhaps I was just thinking to finish cooking quickly thus I could have a great bath soon at that time, that’s why it tasted not so well.

### 梅菜五花肉 Preserved Vegetables with Pork Belly ###


材料:(3人份) Ingredients Serves 3

RM3的五花肉 Pork Belly RM3

咸梅菜兩條 Salted Preserved Vegetables

蒜茸 Smashed Onion

 

腌料 Marinade:

鹽少許 Pinch of salt

胡椒粉少許 Pinch of pepper powder

醬油一湯匙 1 tbps Soy Sauce

蠔油兩湯匙 2 tbps Oyster Sauce

 

做法 Method:

1. 將五花肉切成1/2寸大小的條狀,用腌料腌至少半個小時以上。

Cut the pork belly into 1/2 inch strips. Marinate the pork belly strips in marinade above for at least half an hour and above.


2. 從一棵咸梅菜中拔出了兩條梅菜,洗凈后用水浸泡半個小時。

Choose two strips of preserved vegetables. Wash them and soak them in water for half an hour.


3. 梅菜瀝干切兩公分狀。

Drain the preserved vegetables strips and cut into 2cm long.


4. 起鍋熱油后放入蒜頭爆香,后放入五花肉煎炒至8分熟。

Heat the wok and oil, put in smashed onion and cook until golden brown. Add in pork belly strips. Stir-fry until 80% cooked.


5. 加入梅菜炒至香味,后加水。

Toss in preserved vegetables and stir-fry till aromatic. Pour in some water to cover 3/4 of the ingredients.


6. 等水略干后即可盛起備食。

Dish up after 10 minutes cooked with medium heat.

 


注:不用加鹽了哦!梅菜已經夠咸了!嘻嘻!

TIP:  No need to add in salt already because the preserved vegetables are salty enough.

 


而這個雜菜煲飯是我星期四的午餐。這,算不算是我發明菜式之一?這個煮法跟芋頭煲飯或長豆煲飯的煮法一樣的,只是材料不同而已。

Below is what I called as "Assorted Vegetables Rice". It's just directly translated from Chinese. Basically it's the same way as cooking rice with yam or long beans.


而我就管他叫“一鑊熟”,也是我最喜愛的菜式之一。為何?因為超級簡單又夠飽。

I love this dish. Why? It's because it's easy to cook, and what you need to do is just pour in all the ingredients and rice, and press the button in rice cooker and let it cook. That's it!


這可是我大學時期常煮的一道菜哦!大學里沒有廚房,也不能炒菜,只有一個電飯鍋,所以任何能用電飯鍋弄成的菜式都是我的最愛,當然也包括這一道咯。

It's the dish that I'd usually cooked in University since there was no kitchen and not allow cooking in hostel. What we had was only rice cooker. Thus, any meal which could be made using rice cooker will be my favourite at that time. =P


然而太久沒有煮了,我忘了是否要加鹽加黑曬油!哈哈哈~不過,還是一樣能吃啦!

這道菜有一個好處就是,家里有什么就放什么,然后一次過煲熟就行了。

However it's been a long time I didn't cook this dish, I've forgotten should I put some salt or dark soy bean to make the taste better. Whatever, it's still tasted good without salt and dark soy sauce. What I love the most is you can cook it with any ingredients you can find at home.

[Of course don't really put anything you could find, at least imagine what the taste will be if you mix them all together. =P ]

 

以下的都是我家里能找到的材料。

Below were the ingredients that could be found in my rental house.

### 雜菜煲飯 Assorted Vegetables Rice ###



材料:(1人份)Ingredients (Serve 1)

1人份的米 A bowl of rice (serve 1 - haven't cooked)

紅蘿卜切丁 Diced carrots

蘑菇切丁 Diced mushrooms

雞肉柳一小堆 Chicken fillets

腐竹撕成中片浸軟 Bean curd sheets, soak until soft

黑木耳浸軟切絲 Dried Black Fungus, soak until soft, sliced

豆腐卜兩粒切片 2 deep-fried bean curd puffs, sliced

 

調味料 Seasoning:

醬油二湯匙 2 tbps of soy sauce

(其實,我自己是大概放的,沒有量過是否二湯匙。所以喜歡味道較重的可以加一點點的鹽吧!哈哈!)

Actually I didn't really measure it's truly 2 tbps of soy sauce or not. You can try the taste before cook it in rice cooker, or add in just a little of pinch of salt if you prefer heavy favour.

 

做法 Method:

1. 米洗凈備用。

Wash the rice.


2. 起鍋燒熱加一湯匙油后,加入雞肉柳、蘑菇、豆腐卜略炒。

Heat the wok and add in 1 tbps of oil, put in chicken fillets, diced mushrooms and sliced deep fried bean curd puffs.


3. 后加入蘿卜丁、木耳、腐竹略炒。

Toss in diced carrots, sliced black dried fungus and bean curd sheets and stir-fry with medium heat.


4. 倒入白米翻炒幾回,加入醬油后熄火。

Pour in the washed rice and fry for a while, add in soy sauce and turn off the heat.


5. 把以上的材料倒入電飯鍋中,加水掩蓋材料后煲熟即可。

Pour all the ingredients above into a rice cooker, add water until cover the ingredients (depends on how much rice you put too) and cook. Dish off.

 


注 TIPS:

@ 材料多少依自己的喜愛增多或減少吧!嘻嘻~

@ You can choose the ingredients, add or reduce some as you like.


@ 炒的時候記得別炒太熟哦!因為還有煲的過程。

@ Please don't make it too cooked since you will cook it with rice cooker later. What you do is to cook til a bit aromatic.


@ 煲的時候記得水別放太多啊!不然飯就會變得軟綿綿的了。

@ Please don't put too much water while cooking it in rice cooker. Otherwise, the rice will be too moist.
